Beat the Heat with this Watermelon Treat!

It’s hot here in Austin — that “fry an egg on the sidewalk” kind of hot you see in movies. We’ve been trying to stay hydrated and happy, but after we hit 101° all bets are off and we start melting. These Watermelon Poptails help us fight the hot weather blues!

We were inspired by a Watermelon, Mint & Lime Sorbet recipe from Adeline at Vibrant & Pure Wellness, but instead of serving this refreshing blended concoction as a sorbet, we filled up re-sealable popsicle molds and froze them overnight!

Watermelon Poptails 

Ingredients:

  • 4 cups frozen cubed watermelon (preferably frozen overnight if making the sorbet version)
  • 4 sprigs of mint
  • 1 pinch of lime zest
  • 3 limes
  • 1 cup Tito’s Handmade Vodka
  • 2 Tbsp agave nectar, or to taste
  • 1 cup of ice

Notes:
You can use the sweetener of your choice, simple syrup would work fine as well. Another option would be to omit any sweetener if you prefer your drinks on the less sweet side, as watermelon is fairly sweet on its own.
If you’re in a pinch for time and didn’t freeze your watermelon, you can yield similar results by using the same amount of watermelon, simply add additional ice until your drink reaches a frozen sorbet-like consistency.

Directions:
In a high speed blender combine frozen watermelon, Tito’s Handmade Vodka, 3 sprigs worth of mint leaves (remove leaves from stems) the juice of 1 and a half limes (use the remainder for garnishing), lime zest, agave nectar, and ice. Serve in copper mugs with lime wedges and mint leaves. Can be enjoyed by spoon or straw.
Makes 4 drinks or about 12 popsicles.
